Tammi's Teeny Tiny Kitchen: Arugula Pesto
This a quick and easy way to change up a typical pesto.
I had a fairly large bag of arugula and I just didn’t want a salad, so I decided to put a twist on a typical basil pesto.
1 bag of arugula
1/2 cup parmesan cheese
handful of walnuts
1/2 cup-1 cup olive oil
2 cloves of garlic
salt and pepper to taste
Combine in a food processor and add olive oil until it is your desired consistency.
I like mine a little on the thicker side.
Arugula gives this a bit of a peppery kick and is more earthy than the typical pesto.
It’s perfect spread on a on a turkey club or a grilled cheese with fried shallots. Yum!

Yum! I do a basil pesto with walnuts and it is so good. Next time the arugula is hanging out, it is going in the food processor.
