Banana Bread Pudding

Let’s take this thing to its logical and most extreme resting place……..turning the remains of your regular old banana bread into transcendent banana bread pudding.  If this sounds super indulgent to you, don’t worry, it definitely is!  For my part, it is helping me fulfill one of my New Year’s resolutions: Waste less.

If your banana bread was good, but you couldn’t take down the whole loaf yourself before it started to get a little stale, here is the plan.  I only had about half of my muffins (or loaf) left,  so the amounts for the ingredients below are reflective of that.

  • 1/2 c heavy cream
  • 1 c milk
  • 2 eggs
  • 1/4 c sugar
  • 1 tsp vanilla
  • Whisk ingredients, pour over cubed banana bread pieces, soak five minutes and then bake for 1 hour at 350 degrees in a steam bath.
    Serve warm with vanilla ice cream and enjoy with a Hot Toddy (1 shot Woodford Reserve Whiskey, lemon juice (1/3 of lemon plus slice), 3/4 c hot water and 1 tbsp honey).  It is not the prettiest dish in the world, but your taste buds will not care.
